Last week in my video I told you I would be sharing a couple of my favorite holiday recipes. Today I want to share my fudge recipe with you. You can find the recipe here, but I am going to share how I make it – using the microwave.
Here are the ingredients:
- 3 cups sugar
- 3/4 cup butter or margarine
- 5 oz. evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)
- 1 bag (12 oz.) semi-sweet chocolate chips
- 1 jar (7 oz.) marshmallow creme
- 1 cup chopped walnuts
- 1 tsp. vanilla
Start by melting the butter in the microwave. This should take about 1 minute or so.
You may need to cover it with wax paper to keep it from splattering. When completely melted, add the sugar and the milk; mix well. Microwave on high 5 minutes or until mixture begins to boil, stirring after 3 minutes. The stirring is very important.
Mix well; scrape bowl. Be sure to scrape the sides of the bowl so that all of the sugar dissolves.
Continue microwaving on high 5 1/2 minutes; stir after 3 minutes. Again, this is important!
I share this photograph so you can see it boiling and bubbling up. Be sure to use a large bowl for this so you don’t have a mess of boiling sugar and butter in your microwave!!
Stir in chips until melted. Then add the remaining ingredients and mix well. Stir for several minutes. It might be hard, but it is worth stirring 3-5 minutes to help it set up.
Cool at room temperature; cut into squares. Makes 3 pounds.
If you want to make it on the stove and use a candy thermometer, the instructions are in the recipe referenced in the link above. For years, I made this in the microwave using the instructions on the jar of marshmallow creme. I never wrote them down. Then one year they were gone. No longer on the jar. This was before the internet. I had to write a letter to Kraft explaining my predicament and they sent me a photocopy of the typewritten microwave instructions. No explanation as to why the instructions were no longer on the jar.
I get lots of compliments on this fudge. It is creamy and smooth and has a soft mouth feel.

Um, YES please! I have such sweet (!) memories of my Grannie’s fudge. And my dad makes great chocolate-peanut butter fudge… and sometimes add black walnuts… ahh
He used to make a big pan of fudge in the evenings when we watched TV, and we’d wash it down with cold 16oz Cokes in those tall glass bottles.
Have mercy, all that sugar and caffeine now? Before bed? Not on your life 😉
